VINIFICATION
Grapes are manually harvested and carefully conditioned into small boxes, so that they're well preserved until reaching the wine house.
After the pressing, the must is collected in a vat and cooled. Then, the must is floated to make it clear. Alcoholic fermentation always takes place at low temperatures for weeks, thus safeguarding the aromas of the grape.
