VINIFICATION The red grapes from our best vineyards are harvested by hand and transported in small boxes to our cellar. We start the process with destemming, crushing and gathering the grapes in the cellars. The pre-fermentation maceration is done with mechanical treading for 2 days and the spontaneous fermentation, always done with temperature control, lasts for 10 to 15 days, followed by pressing. The wine ages in barrels for a minimum period of 24 months.
